Even thought the gardens in France are impressive, the plant life in Norway is a miracle after the contrast of the long winter. We returned to Norway to find that the snø in the city had completely melted away leaving bright green lawns and budding trees. And, the weather was noticeably warmer. I found a book in the library called Pick Edible Plants, and it has a large chapter with recipes for weeds you can eat in the spring.
