Smak våre = Tasting spring

Den første innhøsting av sesongen gikk veldig bra. Urtene og ugressne har hadde noen uker å vokse opp, og nå de finnes over alle området. Etter en skykeltur og fottur på Bygdøy, laget jeg et gilde for Matt med fem av spiselige planter. Man må ikke føler skyld plukkende dem, fordi de flest av folk betrakter dem som sørgedrakt, selve om de er oppfylt med kraftig vitaminer, mineraler og fiber.

The first wild harvest of the season went very well. The wild herbs and weeds have had a few weeks to grow and now they can be found all over the area in open spaces and parks. After a bike ride and hike around Bygdøy, I tried to make a gourmet feast with five of these edible plants. Harvesting these greens is actually doing people a service. Most people look down on these plants as pests, but they are actually filled with vitamins, minerals and fiber.

Solskinnssuppe ( En bland av avokado, sjalottløk, grønnsakbuljong, tyrkisk yoghurt og engsyr, en syr og saftig ugress. Suppen blir prydelse med salt, pepper og noen dråper av tabasco).
Sunshine soup (A blend of avocato, shallots, vegetable bullion, Turkisk yogurt and engsyr, a sour and juicy herb. The soup is garnished with salt, pepper and a few drops of tabasco).

Jukseasparges ( Kokte vinterkarse med smør og sitron. Vinterkarse er en villmark substitutter for asparges eller broccoli)
Mock asparagus (Cooked Vinterkarse with butter and lemon juice. Vinterkarse can be used as a wild substitute for asperagus or broccoli, depending on how your prepare it)

Laks på aprilsalat ( Stekte laksfilet på en seng av engsyr, løvetann med en pesto av skvallerkål. Skvallerkål er en av de vanligeste pest planter i norsk hager, med man kan brukes som basil i pesto eller sauser.)
Salmon on an April salad ( Seared Norwegian salmon on a bed of engsyr, dandilion greens and a pesto sauce made from skvallerkål. Skvallerkål is one of the most common weeds in Norwegian gardens, but is can be used like basil in savory sauses.)

Viking brød (Ristet Viking grøv brød med geistost og smørbrukk)
Viking bread (Toasted Viking brown bread with goat cheese garnished with smørbukk, a herb that tastes just like butter lettuce)

So, Laura comes home after her bike ride and says, "Honey, I am going to cook you dinner tonight, with some plants I picked in the forest."...
I was speechless... She then popped off to the store to get some more ingredients. As soon as she left, I looked in the bag at her newly harvested collection of weeds. I gotta say this was the best meal Laura ever cooked. She followed recipes and the whole lot. She is just the best wife, I ever could have hoped for. Yum!
